I’ve been vegetarian for 8 years, and in 2009 I was vegan!
It was fun experimenting in order to veganize Pinoy food (which is flavorful but meat-laden), and learn from already established cuisine that can be vegan-friendly. (Go, Japanese food!)
It was not always easy to find many western vegan products (like soy cheese) in the Philippines, but two things that made being vegan easier was the fact that vegetables (as is almost everything else here) are inexpensive, and more and more farmers are going organic!
Gulay means vegetables – a food group I hated when I was a finicky eater growing up. Who knew I’d become vegetarian?
